Bone Broth.. Our adventure in raising chickens.

My family goes through eggs like crazy - I mean like 3 dozen a week (for a family of 5). We also prefer the beautiful golden yellow/orange of a free range / organic egg, so much to the point that we decided to get chickens.
We we late to the party to order so we got a dozen "straight run" chicks, which means you don't know what the gender is. Clearly we wanted hens for the eggs, but would be ok with a few roosters. A FEW roosters. We got 7. Yes, SEVEN. So once those seven roosters found their purpose in life - crowing at the crack of dawn (and pretty much all day long) it was time to send them to the butcher.
So, now i have seven (scrawny) chickens in my freezer.
Over the last year I make a chicken here and there (i need two for a family meal) and I've been freezing the leftover bones.
So, now I have seven frozen chicken carcasses in my freezer.
Hence, BONE BROTH.
It is literally the easiest thing you can possibly cook, if you have 12 - 24 hours on your hands.
Ingredients - chicken bones
- water
Steps - put bones into a BIG pot
- cover with water
- boil
- turn down to simmer
- let simmer for 12 - 24 hours
That's it.
*feel free to add things like carrots, onions, etc or seasonings, but it isn't necessary. It will be DELICIOUS with or without.
I accidentally made it after thanksgiving last year when I cooked the stock too long and it was gelatinous after cooling.. apparently that's the "liquid gold" :)
